Sweet Potatoes with Spicy Cilantro Aioli Dip

I have a sweet spot for sweet potatoes, but that’s A-OK because these orange little potatoes are darn good for you. At 86 calories, 3g of fibre, and 0.05g of fat per 100g of potato, there’s little we can complain about. They are also packed full of vitamin A –one of the highest levels in root vegetables, in fact! So scrub them up and dig right in.

Sweet Potato Roast Recipe

4 peeled medium-sized sweet potatoes or yams

2-3 tbsp Extra virgin olive oil or grapeseed oil

Paprika to taste

Salt and pepper to taste

Instructions: Heat the oven to 400 degrees F. Wash, peel and cut the potatoes into big chunks. Spread the potato chunks onto a cookie sheet. Toss the potatoes after season them with olive oil, paprika, salt and pepper. Be sure to coat the potatoes well with all the seasonings. Roast in oven for 30 minutes. Serve in a bowl and pair with the cilantro aioli dip, but if you’re not feeling the spice, ketchup works too!

Spicy Cilantro Aioli Dip Recipe

1/2 cup plain Greek yogurt

1 cup fresh cilantro

1 jalapeno pepper (seeded)

1 lime juiced

Salt to taste

Instructions: Combine all of the ingredients in a magic bullet/food processor and blend until smooth. Refrigerate for an hour allowing the flavours to really develop. Makes 3/4 cup of dip.
